FOR THE KOFTA
1 lb ground veal
Handful fresh coriander, chopped
1 onion, chopped
1 tsp garlic paste
2 tsp paprika
1 1/2 tsp coriander powder
1 1/2 tsp cumin powder
1 1/4 tsp salt
FOR THE CURRY
2 tbsp oil
1 onion, sliced
3 garlic cloves, sliced
1 tsp ea: red chilli powder and salt
2 tsp ea: coriander powder and cumin powder
1 cup water, divided
1/2 cup tomato purée
FOR THE CASHEW PASTE:
1/3 cup cashews soaked in 1/2 cup milk for 20 mins then blend to a paste
Garnishes: 4 whole green chilies and fresh coriander
Instructions:
1. Pre-heat air fryer to 375F
2. Combine ingredients for the kofta then form into balls and spray with oil before air frying for 5 mins at 375F
3. In a pan, sauté onions and garlic for few mins, until softened
4. Add spices, half cup water, and cook for 5 mins till thickened
5. Add tomato purée, and cook for 3 mins
6. Add half cup water, mix then add air-fried meatballs, cover and cook for 5 mins
7. Mix in cashew paste then add whole chilies, chopped coriander and cover for 2 mins
Enjoy your veal kofta curry with rice or naan!
